A healthy and delicious breakfast is a great way to start your day. Here is a recipe for homemade mouthwatering lemon-flavored waffles that are served with fresh blueberries (or blackberries). If you really love lemons, then you can even add lemon yoghurt as a topping. It will take you 15 minutes to prepare the ingredients and around 20 minutes to cook the waffles.
Here are all the ingredients you need:
- 1 cup of lemon-flavored yoghurt
- 2 large eggs (Separate the white from the yolk)
- ¾ cup of milk
- 2 cups of all-purpose flour (unbleached)
- 2 teaspoons grated lemon zest
- ¼ cup of sugar
- ½ baking soda
- 1 ½ teaspoons baking powder
- ½ teaspoon salt
- 2 ½ cups of blueberries
When you are ready with all your ingredients, take a small bowl. Beat the milk, egg yolks, lemon zest and lemon yoghurt in it. Then in a separate larger bowl, whisk the remaining ingredients: sugar, all-purpose flour, baking powder, salt and baking soda. Add the mixture from the small bowl to the large bowl and whisk the batter until all the ingredients are combined.
When you are done whisking the batter, take another small bowl and beat the egg whites in it. Beat the egg white until it’s stiff. Then take a rubber spatula and slowly fold the egg whites into the batter until they are combined.
Now your batter is ready. Heat your waffle iron. Make sure you do not forget to spray the grids of the iron. Pour the relevant amount of the batter into the center of the grids and spread it around the corners. Close the waffle iron and bake according to your manufacturer’s instructions. Once your waffles are ready, transfer them on the oven rack. This will keep them warm and crisp, until you are ready to serve them.
Make waffles out of the remaining batter. After you are done making all the waffles, you need to add the toppings. Place waffles on serving plates with butter, maple syrup and blueberries. Serve it before it gets too cold.

You can prepare the batter for waffles the night before. However, beat the egg whites and fold them into the batter only when you are ready to bake the waffles.
Cooked waffles can be kept freezing for a month. You wrap the waffles in plastic wraps and then place them in a plastic bag inside the freezer. When you are ready to eat these waffles, you can place them in a preheated 350-Fahrenheit oven. Bake for around 10 minutes until they are warm and crisp.
If your batter turns out to be too thick, then you will not be able to spread it on the waffle iron. Add milk to fix the consistency of your batter. However, if your batter is too thin, then you need to add flour to the batter until you have the right consistency.
