Christmas Eggnog with Cinnamon SticksLooking for something different to offer at this year’s holiday party? Ditch the carton of eggnog and reach for your punch bowl instead. It’s easy to whip up a delicious batch of eggnog from scratch that will have people talking well after the New Year.

While countless eggnog recipes are available for your brewing pleasure, the insider secrets are what make or break a would-be perfect eggnog batch. If you truly want to become an eggnog-making pro, follow these important secrets.

Mind your Liquor

That’s right folks. Admiral Nelson, Ron Diaz and other bottom shelves plastic bottles have no place in your perfect batch of homemade eggnog. In fact, rum shouldn’t even be an ingredient in your holiday drink.

Reach for high quality bourbon instead and experience the amazing difference this ingredient switch can make. From notes of caramel and vanilla to hints of spice, the right bourbon adds an explosion of flavor to eggnog that would otherwise require a slurry of ingredients.

Whip that Sugar

The perfect eggnog is silky smooth with a perfect blend of flavors. The best way to mess up that mixture is by not properly ensuring the sugar in your eggnog is dissolved while preparing it. When adding the sugar to the egg yolks, whip it good.

Don’t Skimp on Spice

Nutmeg is a staple of any great eggnog recipe. Unfortunately, not all nutmeg spice brands are created equal. If available, buy whole nutmeg and grate it at home moments before adding it to your eggnog. When whole nutmeg isn’t an option, opt for a high quality ground nutmeg brand for maximum flavor.

The Perfect Eggnog

Now that you’ve learned the important insider secrets, it’s on to the good stuff – the eggnog recipe. Remember, with high quality ingredients and attention to detail, you’ll be an eggnog-making pro in no time.

Here’s what you’ll need:

  • 4 eggs, whites and yolks divided

  • 1/2 cup sugar + 2 tablespoons

  • 2 cups whole milk

  • 1 1/4 cups heavy cream

  • 4 ounces high quality bourbon

  • 1 teaspoon nutmeg, freshly grated

Place the egg yolks in the bowl of a stand mixer and whisk until it lightens in color. Slowly add the sugar and continue whisking until the sugar is dissolved and the mixture is pale yellow in color.

Place the milk, cream, bourbon and nutmeg in a saucepan and bring to a boil on high. Slowly pour the hot mixture in with the egg yolks and sugar, whisking constantly while doing so. Pour the mixture back into the saucepan and cook until the temperature reaches 160 degrees.

Transfer the mixture to a large pitcher and chill completely in the refrigerator.

Place the egg whites in a clean stand mixer bowl. Beat the egg whites until soft peaks form. Add 2 tablespoons sugar and continue beating until stiff peaks form. Fold the egg whites in with the chilled eggnog. Divide between glasses, garnish with nutmeg and serve immediately.
